For an upcoming article about Tiki drinks, I made my own Orgeat (prounounced "or-jah") a sweetened almond milk infused with orange blossom water. Don't bother getting the overly sweetened, artificial orgeat. Its super simple to make and gives a new nuance to your cocktails.

8 ounces Raw, blanched almonds
12 ounces sugar
2 tablespoons orange flower water
2 ounces of vodka
Combine almonds with 5 ounces of water in a blender or food processor and blend until you get a fairly fine ground. Place into a glass bowl and add 2 cups of water. Stir and let stand for 3-4 hours (if you're going to let it sit overnight, cover and place in the refrigerator).
Line a sieve or a fine mesh strainer with 2 layers of cheesecloth, letting the sides hang so you have something to grab onto. Pour mixture into the sieve/cheesecloth and the almond milk drain through. Using a wooden spoon, squeeze the excess emulsion from the almonds through as much as you can. Place this mixture into a pot with sugar over a medium heat until the sugar is melted. Take off heat and bring to room temperature. Once cooled, add orange flower water and vodka. Funnel into a quart-sized bottle and refrigerate.
When using remember to shake as the contents tend to separate.
